If you ever come across a good beef cookbook, you will be able to appreciate a good diagram of beef cuts. Beef is the widely consumed animal protein through out the world when compared to any other meat. Hence it is important for a good steward to select a good piece of beef for his wonderful recipe. Grading of beef cuts The beef is usually graded into three categories based on its quality by the United States Department of Agriculture (USDA). Grades are specified after taking into consideration the color, appearance, meats consistency and last but not least the amount of marbling in the beef. The Graded beef is classified as follows: Prime meat Choice meat Select meat Prime Meat The meat, which is having more marbling, is termed as Prime meat. This is usually found in fine restaurants. Select Meat The select meat consists of less marbling, which means low fat and less calories. But it wont be as tender as that of prime and also contains less juice and flavor. Choice Meat Choice meat consists of more marbling than Select meat but less marbling than Prime meat. But it is somewhat tender than Select and also juicy and flavor than select. Beef Cuts The names of the beef cuts vary between countries. Sometimes it varies within the regions of the country also. The rear section of the carcass is termed as Rounds in US, but in Canada it is called hip. Here is a break down of some common cuts of beef: Rib eye This is the top cut preferred by most of the beef connisieurs. This is characterized by abundant marbling. When you cook this beef cut, the rib eye gets melted into the meat and produces a juicy tasting recipe. The Rib eye steak is called an Entrecote in French. Top Sirloin Lesser grade cut but this is the largest beef cut when compared to other beef cuts. In laymans terms, a family of four can complete their dinner with one top sirloin. Always prefer to buy prime grade rather than choice and select grades. Porterhouse As the name suggests, it is not concerned with any kind of house. This beef cut has ample marbling. It is a top loin with good flavor. It has the largest eye and tenderloin. This is being usually used in restaurants with challenge for their customers. They will give entire meal free for those who took all of their 26-ounce steak. Chateaubriand This has been cut from the butt end but should weigh around 24 ounces. A six inches long chateaubriand will weigh around 24 oz. A chateaubriand with Bearnaise sauce served in a dining table is a wonderful delicacy. Filet Mignon A well worth costly choice beef cut, if you cook it with pot-roasting. This is most soft with less water beef cut. This dont have intense flavor as that of rib eye and porterhouse. New York Strip This is one of the cost-effective beef cut parts. This cheap cut is a t-bone with the tenderloin and also a good quality cut. T-bone This is also one of the cheapest beef cuts. This consists of a full loin eye and medium sized tenderloin. A couple for few delicate bites always prefers this. This smaller tenderloin is not always suitable for heavy meals. For heavy dinner, the customers usually prefer New York Strip. Ground Beef Ground beef should not be less than 70% lean. The package will usually indicate whether it is from ground sirloin, or ground round. Suitable cooking methods Loins and ribs are the most tender cuts of beef. The loins and ribs should be cooked with high heating methods to improve its taste and tenderness. Broiling, grilling, roasting, sauting, and frying are the common methods employed for cooking the loins and ribs. Pot-roasting, stewing, and steaming are the most preferred methods of cooking the cuts from the round, plate, brisket and flank. Selecting beef cuts based on cooking methods Apart from selecting a good beef cut from butcher shop or grocery store, the beef cuts can also be selected based on the method of cooking you preferred to perform. If you want to cook the beef on a grill, it is always advised to go for tenderized meat rather than tougher cut from the rounds. A beef with minimum of 2 inches thick may require oven roasts. A very tender cut such as loin and rib primal cuts can be oven roasted for better results. If you want to do Pot roast, it is always to select the beef cuts from round and chuck. Pot roast is the method of boiling the beef in a pot containing liquid in the stove. Standing rump, eye roast are the best pot roast products. Tips to select better beef cuts Before shopping for a good beef cut for a particular recipe, you should learn about the various cuts available in the market. The following tips may help you in selecting good beef cuts: 1. Try to locate the origin of the cuts from the body of the carcass. 2. This will help you to identify the names of the cuts. 3. Look for the tenderness and leanness of the beef cuts before procuring it. 4. Inspect the “Sell-by” date in the packaged beef. You should buy your beef cut either before or on the “sell by” date. 5. When selecting the beef cuts from cold storage cases of the grocery stores, the packages chosen for your use should have no excess liquid at all. If it is not too cold, then it has been stored above 40 degrees and taste may be questionable. Inspect thoroughly the coolness of the pack and ensure that it has not been damaged. 6. Firmness of roasts and steaks should be checked. Avoid the purchasing of soft roasts and squishy steaks. 7. Always select the beef cuts that are bright red in color with thin creamy white fat evenly distributed throughout the surface. But if you are selecting veal, the color should be either white or light pink. 8. Geothermal Projects in Indonesia

By Mohamad Mova Al ‘Afghani Update on renewable energy investment in Indonesia. There is an interesting article in the Jakarta Post on Geothermal investment. Indonesia has developed only less than a thousand MW of geothermal power although it is estimated to have nearly one-third of the world’s geothermal resources. A research from the ministry of mineral resources mentioned that there are 252 geothermal locations which have been identified along a volcanic belt extending from Sumatera, Java, Nusa Tenggara, Sulawesi until Maluku. These heat resources has the total potential of 27 GWe, which puts Indonesia as the biggest geothermal potential country in the world! A Jakarta Post op ed told that (i) tax uncertainties and (ii) legal uncertainties are among the frontlines of investment barriers. Geothermal investment is really a high risk-high return investment scheme which involves huge exploration and exploitation funds. It is never intended as a short term investment. Investors are afraid that their contracts are not being honoured. I’ll give a little comment on the legal barriers. Generally contract observance remained high. Business partners will think twice before deciding to bailout from a contract since litigation costs are too high. The problem stems not from observance of the contract but mainly due to regional autonomy. How much share will the regions receive are the hot issue. There has been a case where Garut regional government requests Chevron and the Central Government to disburse concession money for their region. They even threatened to invalidate Article 41 of the Geothermal Law to the Constitutional Court. Article 41 governs a transitory provision which stipulates that all contracts prior to the entry into force of the Geothermal Law will remain valid. Under this transitory provision, regions don’t receive any money. Of course, their attempts to invalidate the article are futile. It must also be noted that the 2003 Geothermal Law gave many power to regions in particular with respect to licensing. This is a good opportunity for investors as they can now deal directly with the regions. During the old days, people will have to deal with state owned enterprise such as PLN or Pertamina. However, it is necessary to make sure that both central and regional government approves or condone the projects. It wouldn’t be good if after a few years of investing the license given by regional government is revoked by the central, or a license given by central government is revoked by the central. In any event, although the regions are granted more power, it is always important to asks some sort of condonation from the central government. However, unless you take care, it can also become all-consuming, with little return (besides creating good karma). There is nothing wrong with good karma, or better yet, feeling good about lending a hand in the community. The whole point of volunteering should not solely be to expand your marketing. If it is, you wont get very far (read reincarnated as a dung beetle). You should honestly be concerned about the project you chose to support. Doing your best for the project at hand must come before your desire to network. Those who join a cause for purely selfish reasons are usually uncovered. Potential contacts become turned off and few people will do business with those with questionable ethics. So how do you get more from your efforts than a warm glow? One method is, to choose a cause that needs someone with your expertise and will allow you to showcase your talents. Major organizations (Lions, United Way, etc.) usually have well-established hierarchies, and positions are often taken, but they offer a better opportunity to build relationships with movers and shakers. One-time events take less time in the long run and can provide a better chance for publicity. Working with influential people, is more likely to make a difference to your career. Stuffing envelopes may be just as crucial to the cause, but you are unlikely to get much recognition or a chance to build rapport. Once youve volunteered, dont rush into making contacts. As you work together, conversation will run the gamut, from weather to the kids, and inevitably, to business. Its a friendly, natural way for people of influence to get to know you. These people may or may not need your services, but chances are they know those who do. If they are impressed by your work on the project, they are likely to refer you to others. You have made valuable contacts. Contacts who can last a lifetime. If you have taken a leadership role in creating a campaign, organizing volunteers, raising funds, or performed other key functions, you may discreetly blow your own horn. Do it discreetly, but do it, because it is all too easy to have your participation overlooked. Because they donate large sums of money, large corporations often take the spotlight away from individual volunteers. Thats not to knock corporations, because without their contributions many projects would falter. Those in charge of volunteer projects maybe aware of the value you bring, however they may not realize the importance of public recognition to a small business. If they do, they may no know how to help you get that recognition. Although your efforts were vital to producing a successful project, you wont automatically receive any collateral marketing opportunities. It is up to you to get the word out. Your, or your companys, involvement in an important cause might be news to the local newspaper, and it might also be worthy of mention in an industry publication. A graphic monthly may be interested in a design firms involvement in a good cause. Likewise, an accounting periodical might like to know about an accountants involvement in fundraising. Send press releases to media that are related to your field. Write them in proper press release language. If you dont know how, buy a book or hire someone who can write press releases. Its worth the cost. Take care not to bite off more than you can chew. Becoming too involved and spending an inordinate amount of time for the cause, will send out mixed messages. To some, you are unselfishly dedicated; to others, its a sign that your business is slow or you dont know how to manage your time properly. Know when to say no. All play a role in keeping our hearts and immune system functioning as it should. The most popular fish we consume is tuna, salmon, flounder, Pollock and cod. But considering there are about 25,000 species of fish, there is enough variety of edible fish for the most discriminating taste. But how do you know when you are bringing the freshest fish to your table? When you approach the fish market, let your nose be your guide. Really fresh fish has a very light smell. If it has a strong fishy smell pass it up. It may have been processed incorrectly after being caught. If the fresh catch from the fishing boat has equipment to flash freeze the fish, when it arrives to you it will not have that strong smell. You should also check the date the fish was packaged (especially if you are purchasing at your local supermarket). Fishy smell will permeate even through plastic. Dont buy it. You will also want to have a look around. The market and the staff should be very clean. The fish should have that just caught look. Not that slimy feel. The eyes should be bright and shiny, not dull and sunken. The gills should have the redness around them. These are all signs of freshness. Another sign that your fish is not fresh is that when you take your finger and press the flesh the indentation remains. Fresh fish will not do this. When you bring your fish home, use it within two days. Fish deteriorates very quickly. Much quicker than beef or chicken, so make sure that when you use it, its almost right away. Your health is very important so feed your body and be safe. Now if you are one of the millions of avid fisherman and prefer boating and catching your own fish, then freshness is generally not a problem if you follow some basic rules. Its quite simple. Ice! Whether you have a fishing boat or pleasure craft, all boats can have an ice packed cooler. So bring home the catch, put on a hot frying pan or turn on the grill and enjoy the fruits of your labor. Freshness is the most important thing about your next aquatic culinary meal and your family will love it. How can you tell when your fish is cooked? The most common mistake is over cooking. When the fish changes color and it is uniform all the way through, it is done. Dont go a minute more. You will make a rubbery mess. You want your fish to maintain its moisture and you can do that with vegetable oil or butter. Below is a great example of a moisture rich fish recipe. 2 1/2 pounds red snapper fillet with the skin Salt and pepper 1 tablespoon seafood seasoning blend 3 tablespoons extra-virgin olive oil 3 cloves garlic, crushed 1/2 cup white wine 1/4 cup sun-dried tomatoes or regular tomatoes chopped (if you like anchovies you can add them) 1 quart chicken stock fresh or from a container from your supermarket 1 loaf crusty bread Season the fish with salt, pepper and seafood seasoning. Heat a large deep skillet over medium-high heat. Add extra-virgin olive oil & garlic. Add snapper, skin side down and cook for 3 minutes or till golden brown then flip the fish for further cooking. Add wine then add chopped tomatoes and stir in chicken stock. Stir the mixture gently so you do not break up the fish. Bring the broth to a simmer and cook another 3 to 5 minutes to combine the flavors. Serve the fish in bowls with lots of broth. Serve with plenty of crusty bread. Enjoy! About the author Philip G. Paul Revere, Internet Marketing, and the 80/20 Rule

By Wayne Sedlak Ill bet you thought you knew all about Paul Revere. He was,of course, responsible for inventing the Internetuh, nosorry, wrong turn. Not that he couldnt have used Internet marketingprinciples, however, had the Internet been available.Putting an ad up on Google sure would have made life a loteasier than, say, getting captured by the Britishnot tomention a greater impact, as Internet marketing goes. But, his famous ride to awaken the colonists has historians- but not marketers utterly baffled. Why? Lets see firstthe problem then how marketing (particularly Internetmarketing principles) solves the problem. Most historians dont understand the 80/20 Rule. Dont getme wrong. A lot of people dont understand the implicationsof the 80/20 Rule. They dont understand its recursivenature, the 64 4 Rule, the 51.2 -0.8 Rule,Sierpinski Triangles, and so on. But, its really not necessary to understand all of that,anyway. What you should know is simple: the 80/20 Rulesimply means 80% of your results will flow from 20% of yourefforts. Thats the simplicity of the 80/20 Rule forInternet marketingor anything else. Paul Revere understood the 80/20 Rule well, in concept. Ibet he would have taken to Internet marketing too. You see, historians cant understand why Paul Reveres rideproduced a word- of mouth- epidemic (buzz) and why fellowyeller William Dawes ride did not. After all, Dawestraveled 17 miles on horseback that night. But, almost noone from the southerly circuit of towns he visited townslike Roxbury, Brookline, Watertown, and Waltham respondedto the call. Thats the reason he goes as an unsung hero in our history. Moore -Century Magazine, 1896). Seems unfair. Many historians lament Dawes, theunrecognized hero. But, then again, the 80/20 Rule shows usthat life is disproportionate in its results. That wasnt Paul Reveres only ride: You see, the 80/20 Rule teaches us one simple lesson andseveral very powerful ones. So dont go away. The simple lesson? Thats easy. Focus and prioritize onwhat you do best. Each of us is, or should be, a specialistin a particular niche. In other words, very good in one area and a duck out of water elsewhere. That was Paul Revere. As renowned historian David HackettFischer put it, unlike Dawes, Revere had an uncanny geniusfor being in the center of events. From the Boston Tea Party to the Revolution, committeesand congresses sprang up all over New England. Revere rodefrom one city to another, bearing messages and linking toeach other. Consequently, he was well known. He rode to Philadelphia from Boston regularly carryingorganizational messages. He rode from Boston to NewHampshire, from Boston to New York, and from Boston to justabout anywhere in New England. He connected people to people, and people to news andevents. And he did it well. While 80% of the leadershipbelonged to but one committee, he was only one of two menwho served on almost all of the committees in Boston.(80/20 Rule: The most accomplish the least. The leastaccomplish the most.) More popularly known as: If you wantsomething done well, give it to a busy person. He was a clearinghouse for information about the British.In other words, if you knew something and didnt know who totell, you went to Paul Revere. So, when the stable boy overheard the conversation of thetwo British officers, he went to Paul Revere. When Paul Revere mounted his horse that fateful night, histravels were strategicHe knew who the town fathers,militia commanders, Minutemen officers, key ministers,opposition lawyers, merchant leadership, and otherstrategically placed individuals were and where theylived. Dawes did not have that gift. He was not well known. He hadnot traveled widely. Consequently, his efforts that nightwere spent on arousing common folk, no doubt, but mostpeople didnt know where to go, or who to contact, or whatthe next step should be. Paul Revere knew the leadership. What they needed was whatwe all call in Internet marketing, a message to marketmatch, (when and where specifically the British weremoving). Paul Revere supplied that match. The 80/20 Rule is a filterfor precision matches between effort and result. He suppliedthat filter: Preparation and research? His keywords were people,places and events learned over three years Key knowledge? The information from the stable boy andwhen the British would move Strategic niches? Most profitable towns to alarm inthe shortest amount of time Pre-qualified traffic? The individuals who wereprepared to respond to his call, did so, like clockwork. Message to market match? They would act in directresponse to his focused message and Call to action? The British are coming. Resistthemnow. Revere was less a rider and more a guided missile thatnight. Specific. Targeted. Effective. Those are theingredients for successful Internet marketingand the callto Lexington Green that next day was an 80/20 Rule inplay. Every Internet marketer knows from the 80/20 Rule, thatInternet marketing is a process, broken down into steps,each step catering to the comfort zone of different kindsof individuals. The days of one stop, one purchase areover. Most people will NOT purchase in one stopso deviseother kinds of response (email follow-up, mini-courses, optins, surveys, etc.) As any Internet marketing specialist knows, if people areconfused, they take no action, except to leave the issue(or website) alone. If Dawes had had a website, they wouldve left it confusedwith no way to respond to any call to action. So, people didnt act under his call until days later,after Lexington and Concord were history. Yes, William Dawes was a hero. But, his ride took so muchmore effort, accomplished much less, and took much longerto finish Mixed results, at best. People can stay more in touch, be more up to date, be safer in possibly unsafe situations, work harder and play harder. Despite many rumors and fears, one thing not getting easier is telemarketing. Telemarketers are one of the most dreaded phone calls for many telephone users. People have tried to avoid telemarketer calls with unlisted numbers, caller ID, call screening, Do Not Call lists and the law. The law is possibly the least considered; especially considering it is already in place for you the consumer. The rise of cell phones has brought several concerns; including the concern over telemarketers gaining access to cell phone number lists. Many people consider their cell phones to be more private than a landline phone. Strangers calling this number can be received as an invasion of personal space and privacy. Several considerations must be taken into account before becoming too concerned over this issue. First, there currently is no cell phone number list available to telemarketers. Numerous large phone companies had discussed creating a large cell phone database, but to no avail. As the cell phone movement progresses, keep track of what your cell phone company is doing with your number (and phone records). If a database does exist within your company, it may be possible to ask to be taken off the list. Many companies are concerned about customer fears and consequences to the company because of those fears. Try sending an email or writing a letter stating what you think about a cell phone number list. Enough of a similar opinion can sway the head decision maker of a company. Secondly, the law is on the cell phone owner’s side. It is currently illegal for a telemarketer to make a telemarketing call to a cell phone number if the telemarketer is using an automated dialer. Most telemarketing companies use the automatic dialer technique, thus could not call your cell phone even if they had gotten hold of your number. If all else fails, you can register you cell phone number with the National Do Not Call List. A telemarketer cannot call you if your number is in this registry the number. This registry is the same one you may have registered your landline phone number with. You may register your cell phone (and land line) with this registry at any time. If you are continually getting telemarketing type calls on your cell phone, do some research into what type of other lists you may be on. Sometimes signing up for something (magazines, free offers, etc) puts the phone number you have provided on a list salable to outside companies. You should also confirm that groups who do have your phone number do not create such a list, or at least ensure that you are not on such a list.
